Step 4:
Once everything is cooked and I lay out the tortillas on a clean surface and I start building each roll-up with a layer of eggs and sausage and bacon and then a generous sprinkle of shredded cheese.
Step 5:
I fold in the sides of the tortilla and roll it up tightly like a burrito.
Step 6:
Next and I warm a skillet or griddle over medium heat and place the roll-ups seam-side down and pressing gently with tongs until they’re golden and slightly crispy on all sides.
Step 7:
I slice them in half or serve them whole and depending on the occasion and always while they’re warm and melty inside.
