Grilled Chicken Salad

Grilled chicken salad became a staple for me during a stretch of busy weekdays when I needed meals that were both healthy and satisfying without requiring too much time. I had just grilled a few extra chicken breasts for dinner and decided to throw the leftovers over a bowl of crisp veggies and it turned out to be one of the most flavorful and refreshing meals I’d had in a while.

Grilled Chicken Salad

Since then it’s been my go-to for lunches and light dinners especially when I want something packed with protein but still vibrant and fresh. Between the smoky grilled chicken and the crunchy veggies and a splash of lemon or dressing and it’s a well-balanced dish that never feels boring.

Ingredients

Here’s what I use for this recipe. You can always make substitutions if you prefer!

  • Chicken breast – Grilled to perfection and sliced for a hearty and protein-rich topping.
  • Romaine lettuce – A crisp and sturdy green base that holds up well to warm toppings.
  • Cherry tomatoes – Juicy and sweet and they add a pop of color and flavor.
  • Cucumber – Cool and crunchy and balances the smoky chicken.
  • Carrots – Adds a bit of sweetness and bright crunch.
  • Red onion – Sharp and slightly spicy and perfect for contrast.
  • Olive oil – Helps keep the chicken juicy and forms the base of a simple dressing.
  • Lemon wedges – Adds brightness and freshness right before serving.
  • Fresh parsley – A sprinkle for color and herbal flavor.
  • Tools You’ll Need
  • Grill or grill pan – For cooking the chicken and creating those delicious grill marks.
  • Tongs – Helps flip and handle the chicken on the grill.
  • Cutting board – For slicing vegetables and grilled chicken.
  • Sharp knife – Makes clean cuts through meat and produce.
  • Large salad bowl – To combine and toss all the ingredients.
  • Whisk or fork – Useful if you decide to mix a quick lemon dressing.
Grilled Chicken Salad

Instructions

Step 1: Grill the chicken

I season the chicken breast with olive oil and a bit of salt and pepper and then grill it over medium-high heat for 5–6 minutes per side until fully cooked and then I let it rest before slicing into strips.

Step 2: Prep the vegetables

While the chicken rests I slice the cucumber and halve the cherry tomatoes and shred the carrots and thinly slice the red onion.

Step 3: Assemble the salad

I place the chopped romaine lettuce in a large bowl and layer on the cucumber and tomatoes and carrots and onion and give it all a light toss.

Step 4: Add the chicken

I slice the grilled chicken into strips and lay them right on top of the salad and it adds both flavor and a beautiful presentation.

Step 5: Garnish and serve

I finish with a drizzle of olive oil or a simple lemon vinaigrette and sprinkle chopped parsley on top and serve it with lemon wedges on the side.

Tips

If you want to switch it up I sometimes marinate the chicken in lemon juice and garlic before grilling for extra flavor. To make it even more filling I like adding avocado or a handful of cooked quinoa. It also pairs well with a yogurt-based or balsamic dressing depending on your mood.

Ways to Serve

As a light lunch or dinner on its own.

With a side of pita bread or hummus for a Mediterranean twist.
